2014年12月5日 · I wouldn't boil it, I would braise it in beef stock and aromatics on the smoker. Tongue can dry out pretty quickly. I braise a lot of meats on the smoker. The liquid really picks up the smoke. Leaving the skin on while braising doesn't keep it from getting a smoke flavor. It's just easier to pull off after it has cooked. I love beef tongue.

This is pretty typical how it's done. It's usually sliced thin and served on cracker type stuff. Mostly a snack or maybe lunch food.

I sliced open the top of the tongue, seasoned in and all around, wrapped in foil with a little water and cooked in the oven until the meat fell apart. Made tacos with it :) I think it can all be cooked well I just don't have the input for you.
