2022年4月9日 — So, the NY's were cooked on the Traeger and the wife love her's. It could be fresh vs frozen especially if the frozen was not vac pak'd first. For a bit more definitive test I'd cook two and have her do a taste test. One fresh and one that had been frozen for 24 hours in a vacuumed bag then thawed (in the bag) on a rack on the counter.

Basically, you smear the steak with salt, pepper and olive oil on both sides, sear it for 90 seconds on each side and bake it at 175 for @50mins. If you've never tried this I highly suggest it!

Then it will be dry the second hour as the salt dissolves and the moisture reabsorbs into the meat. The third hour gives it time to get to the middle of the meat.

2013年7月2日 — Almost all leftovers from my smokes are vacuum sealed and frozen for another day of enjoyment. In some cases it tastes better then the day it was smoked. No need to fire up the oven to reheat, just plop the bag into a pot of simmering water. If I take them to work then I reheat with the microwave - not as good but it works.
