ESP = encapsulating security payload. It is part of IPSec and in simplest terms provides encryption and authentication between endpoints of a VPN tunnel. There is another protocol AH (authentication header) which can be used with or instead of ESP. ESP is protocol 50, AH is protocol 51. VPNs can fail if a firewall is blocking 50 and/or 51.

ESP/AH being a L3 protocol doesn't have a port number, rather it has a protocol number ( IP 50/51 respectively). & if please note that, UDP 500 is for ISAKMP & not for esp/ah. Remember, port number is only for those protocols who has there own transport (L4) mechanism , for example, RIP, BGP.

I'm watching an INE video for IPSEC VPN's, specifically the section about IPSEC Control Plane vs Data Plane. In the video the instructor is talking about that IPSEC uses port 500 (for AH and ESP) in the Control plane and Protocol number 50 and 51 for ESP and AH. The key is with ESP, the entire packet is encrypted. AH does not encrypt the packet, just provides authentication and integrity. IPSec tunnels operate in 2 modes, tunnel and transport. In tunnel mode a new IP header is added in front of the ESP/AH header. In transport mode, the original IP header is prepended to the ESP/AH header.

These protocols are used to improve security at the IP level and above, As Juergen said , ESP has the servicve of AH so you don´t need to user AH while using ESP.
