2011年2月19日 · BBQ and Smoking is a lot of "Trail and Error". God knows I've made lots of errors! Try Mesquite or Hickory and see if you like it. I like Mesquite on Chicken, but would be too heavy on cheese for my tastes. Also, I usually smoke my cheese for 2+ hours. Next time, I'll smoke for around 1 1/2 hours for a little lighter smoke flavor. Todd

2017年3月22日 · Turned out pretty good. We took a barrel and cut a hole in the side at the bottom and in the center of the lid. Welded up an 8" pipe and put it through the holes and put our fire in the pipe. Stuffed wood all the way around inside and let it go about 5-6 hours. Turned out good, next time we will cut the wood up into smaller pieces though.

Quite by accident, I found I get a great flavor by using 1/3 to 1/2 the amount of mesquite compared to any of the other woods mentioned. Pre-heating mesquite also prevents that mouth-puckering flavor.

The flowers are edible but i have never eaten them. It is a deciduous wood and it grows FAST! The flowers bloom in late spring but the best use for this wood surprisingly is for scrolling.
