2013年1月15日 · To me it smells like coffee, and to my husband it smells like ammonia - he is a super-taster and finds raw tomatoes, and raw cruciferous vegetables bitter. I find them delightful. I make natto at home, and yes, the smell is strong, but to me it smells like badly made coffee from robusta beans. Acrid?

Is Nattou safe to eat when it has white dots on it?
They're a bit crunchy, which you may or may not like. If you don't like the dots, get young nattou and consume it before the crystals form. If you do like them, get more mature nattou. With younger nattou, you should be able to store it opened in the fridge for a few days before the crystals start to form.
Does natto really need to be fermented at body temperature?
Natto bacteria are very comfortable with high temperatures and you should aim for between 38 and 42 degrees for a full 20 hours. Try looking at Natto Dad - he has a blog and YouTube videos which were very helpful to me. My second batch of nattō is currently fermenting.
